These protein pancakes are so easy and simple to make and are definitely now a weekend favorite in our home. If you have time to sit down and eat a stack of pancakes for breakfast, you should definitely give these a try. And they are only 50 Cals/pancake!
Easy Protein Pancakes
Ingredients
1/4 cup self-raising flour
2 Scoops of protein (recommend vanilla)
1 Tbsp Bicarb Soda
Salt
2 eggs
1 Cup Yoghurt
2 Tbsp Sugar-Free Maple Syrup (coles)
Cooking Spray
50g Blueberries
Instructions
Mix the dry ingredients
Add 2 eggs, yogurt, and maple syrup and mix it in.
Heat a large non-stick frying pan over medium heat. Grease the pan with a little bit of cooking oil. Using 1/4 cup mixture per pancake, cook for 2 minutes or until bubbles appear on the surface. Turn and cook for a further 1 minute or until cooked through. Make sure you don't cook them longer than this cause they will come out dry.
Once all the pancakes are cooked add the blueberries to the pan. Crush them and add a tbsp of maple syrup.
Top the pancakes with the blueberry jam and enjoy!
