I recently started marinating my chicken as a meal prep on Sunday afternoon, and I highly recommend it. It makes for a quick and healthy meal-prep in your busy schedule. If you have an air fryer, simply air-fry the marinated chicken for 10 min on 240C or fry in some oil.
We do our weekly shopping every Sunday and I always buy a package of chicken fillets and make this marinate. Sometimes when I'm busy I cook up all the chicken on the Monday so I have ready chicken over the week, and sometimes I let it sit for 3 days to really soak up the flavours.
My favourite Meal Prep
There's a lot of ways to marinate your chicken and you can find heaps of really delicious recipes online. This is usually how I marinate my chicken. Sometimes I mix in some honey and chilli in there as well for a sweet and spicy touch.
Chicken Marinade
Ingredients
2 Tbsp Soy Sauce
1 Tbsp Chinese Cooking Wine
1 Tbsp Oyster Sauce
1 Tsp Onion Powder
1Tsp Garlic Powder (better using 2 garlic cloves, but I'm lazy)
Salt
Pepper
Instructions
Start by cutting up your chicken. If you half the fillets and make them thinner the cooking time is less and it's easier to prevent them from getting dry.
Mix the Soy Sauce, Chinese Cooking Wine, Oyster Sauce, Onion & Garlic Powder and Salt & Pepper.
Mix the Marinade with the chicken and place in the fridge. Minimum 2 hours, optimally 48 (the longer they're in the marinate the more flavour the chicken will soak up.
Have it in the marinate and cook up the chicken for your meal or let it soak for 24 hours and cook up all of it for ready meal prepped chicken.
